asparagus with truffle oil and toasted pine nuts
1 small bunch asparagus
1/3 cup pine nuts
Sea salt
2 tablespoons truffle oil
1. Cut or snap the ends off the asparagus. Add water 1 inch deep to a large frying pan and bring to a boil. Boil asparagus for 2 minutes. Remove and dry gently on a paper towel.
2. Spread pine nuts on a baking sheet and sprinkle with sea salt. Broil pine nuts in the oven for about 3-5 minutes.
3. Arrange on a platter and top with pine nuts. Drizzle truffle oil over top and sprinkle with sea salt.
