Chicken with Sweet Potatoes & Grapes
3 tbsp onion, peeled and chopped
1 tbsp olive oil
125g (4oz) chicken breast fillets, cut into chunks
1 sweet potato, peeled and chopped
1 cup unsalted chicken stock
6 seedless grapes, peeled
Saute the onion in the olive oil until softened but not coloured. add the chicken and saute for 3-4 minutes until browned. add the sweet potato and pour the stock over the top.
cover and simmer for about 12 minutes or until the chicken is cooked through. Add the grapes and puree in a blender until it is the desired consistency.
