Fresh Tomato Dill Soup
1 tbsp olive oil
1 tsp crushed garlic
1 medium carrot, chopped
1 celery stalk, chopped
1 cup chopped onion
2 cups chicken stock
5 cups chopped ripe tomatoes
3 tbsp tomato paste
2 tsp granulated sugar
3 tbsp chopped fresh dill
1. In a large nonstick saucepan, heat oil; saute garlic, carrot, celery and onion until softened, approximately 5 minutes.
2. Add stock, tomatoes and tomato paste; reduce heat, cover and simmer for 20 minutes, stirring occasionally.
3. Puree in food processor until smooth. Add sugar and dill; mix well.
