Grab-N-Go protein-rich lemony cereal "cookies"
2 cups cornflakes
2/3 cup white whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon orange zest
1/4 cup brown sugar
3 tablespoons ground flaxseeds
1 egg, lightly beaten
1/4 cup canola oil
2 teaspoons pure lemon extract
3/4 cup organic low-fat small-curd cottage cheese
1. Preheat oven to 400 degrees. Spray a baking sheet with canola oil cooking spray.
2. Place cornflakes in a blender or food processor and pulse into fine crumbs. Add cornflake crumbs to a medium-sized bowl; mix in flour, baking soda, salt, orange zest, sugar and flaxseeds.
3. In a seperate bowl, mix together the egg, oil, lemon extract, and cottage cheese. Add the dry ingredients to the wet ingredients and mix until just moistened.
4. Drop about 2 teaspoons of batter per cookie onto the baking sheet. Flatter the batter iwth the back of a fork. Bake cookies for about 15 minutes. Remove cookies from oven and let cool and harden for 10 minutes before eating.
