Herb-Roasted Salmon

1 large salmon fillet
1 tbsp olive oil
2 tbsp chopped fresh chives
1 tbsp chopped fresh tarragon or 1 tsp dried
Salt and freshly ground black pepper

1.Preheat oven to 450oF (230oC) Shallow oblong pan, greased

2. Place fish skin side down in prepared pan.

3. In a small bowl, combine oil, chives and tarragon. Rub half into flesh of salmon.

4. Bake for 10 minutes per inch (2.5cm) of thickness or until fish is opaque and flakes easily when tested with a fork.

5. To serve, cut salmon in half crosswise. Lift flesh from skin with spatula. Transfer to a platter. Discard skin, and then drizzle fish with remaining herbs and oil. Season lightly with salt and pepper.
