Peach Puree

4 ripe peaches or nectarines, pitted and cut into even chunks

Boil water in a pot and place peach chunks in a steamer basket over the pot. Cover and steam about 2 - 4 minutes until soft but not mushy or falling apart depending on ripeness. When done peaches should pierce easily with a fork. Let cool.

Scrape flesh from skins and puree in a food processor until smooth.

Note: Ripe peaches may also be peeled and pureed without cooking. To store, refrigerate cooled puree in an airtight container for up to 3 days, or fill ice-cube trays or larger containers to freeze for up to 3 months.
