garlic shrimp and feta linguine

2 tablespoons olive oil
1 small white onion, diced
24 large shrimp, peeled, deveined, tail removed
16 ounces fresh linguine
4 large cloves garlic, crushed
1 can diced tomatoes drained
31/2 ounces feta cheese
Freshly ground black pepper

1. In a large pot over high heat, bring 8 cups of water to a boil. Cook linguine according to instructions on the package.

2. Meanwhile, heat olive oil in a  large frying pan over medium heat. Add onion; cook until translucent, about 3-4 minutes. Add shrimp; cook until pink, about 2-3 minutes. Remove shrimp and set aside. Add garlic and tomatoes to pan; cook over medium-high heat until most of the liquid is evaporated. Add feta. Reduce heat to medium, stirring until the cheese blends into the sauce. Season with ground pepper.
