sweet potato fries with truffle aioli
Fries:
2 large sweet potatoes
2 table spoons sesame oil
Dash of salt and freshly ground pepper
Aioli
2 tablespoons low-fat mayonnaise
1 teaspoon truffle oil
Salt and freshly ground black pepper
1. Turn broiler to high. Peel sweet potatoes and cut into even chip-size wedges. In large mixing bowl toss with sesame oil, salt and pepper to coat.
2. Spread fries in a single layer on a lightly oiled baking sheet. Bake for 10-15 minutes, to desired doneness - tender or crisp - turning halfway through. They burn quickly so keep an eye on them.
3. Meanwhile, prepare the truffle aioli. In a small bowl, gently combine mayonnaise and truffle oil. Season with salt and ground pepper.
